A lady the other day was talking to me about her Indian connections and how she makes curry at home here in UK. The interesting bit was that she has never been to India before but adores the food. She said she likes coriander a lot and it reminded me of my coriander chicken. Hope she is reading this.
If you like the taste and flavour of coriander leaves, try this one for a nice change from the red tomato based sauces. It is surely a very tasty curry and is also one of my favourites.
So here is the recipe:
Ingredients
Serves 4
2 teaspoon cooking oil
2 medium onion, sliced
Coriander & Mint sauce:
2 green chillies
1 medium bunch of fresh coriander (cilantro), cleaned
5 leaves of mint
1/2 teaspoon turmeric powder
About 1 teaspoon salt
Cooking Method
Coriander & Mint sauce:
Grind Mint, coriander, green chillies using water to make a fine paste.
Heat the oil in a wide pot over a medium flame. When hot add onions and cook for 5-7 minutes or so until they’re starting to turn brown. Don’t worry about under or over cooking them too much.
Then add chicken in it and fry for 3-4 minutes untill white.
Grind Mint, coriander, green chillies using water to make a fine paste.
Heat the oil in a wide pot over a medium flame. When hot add onions and cook for 5-7 minutes or so until they’re starting to turn brown. Don’t worry about under or over cooking them too much.
Then add chicken in it and fry for 3-4 minutes untill white.
Add 1/2 teaspoon of turmeric & salt. Then add 1 cup water and cook till it simmers.
At the end stage, add 1 tablespoon yoghurt just before you turn off the heat.
That is the curry ready. You can enjoy this with steamed rice or naan bread. Let me know how you liked this recipe.
